To change colours as a set, create a color group with the same number of colours as there are in the artwork. Creating color palettes with swatches in illustrator is simply a matter of choosing your colors, adding them as a group in the swatches menu, and then saving them to your swatches library. Here you can not only choose your colors for the fill and stroke, but also swap between grayscale, rgb, hsb, cmyk and web safe colors by clicking on the little dropdown. First we need to be able to access our colors in illustrator.

Apply a default gradient to the fill or stroke of artwork by clicking the fill color or stroke color in the properties panel to the right of the document and selecting a saved gradient swatch. Now you can easily grab some of these colors and drop them into the swatches palette in illustrator.
